What is the best way to solder two plugs to an ESC in a "T" configuration?
also how do you put heat-shrink on them?

What do you mean "in a T configuration"? Are taking about 'parallel', or 'in-series'?

Two sets of two plugs for Parallel connection. two 4S -5000 packs in parallel.

A picture is worth a thousand words.
The red and Black wires are coming from the ESC.

So, parallel...in other words, the voltage into the ESC from two packs three same as the voltage from a single pack, but doubling the capacity (ie. the ESC will "see" two 4000mAh 2S packs as if it were a single 8000mAh 2S pack).
Honestly, don't try to create this T design. You will be MUCH better off soldering a traditional parallel design, with each side (positive & negative) going to a Y, with the bottom of the Y going to the ESC, and connectors on each side of the top of the Y. See image.

Hi Larry
a bit time consuming to construct, but way quick/easy in the pits :

If you look at my picture below.
I am thinking about turning on the lath, a piece of solid copper down to fit into the back of the plugs, and solider them so that they are toughing each other.
I would then drill a hole the required size of the ESC wire, in the middle between the two plugs for the ESC wire.
The other question then is how to shrink wrap it?

Liquid electrical tape.
NZMPBA 2013, 2016 Open Electric Champion. NZMPBA 2016 P Offshore Champion.
2016 SUHA Q Sport Hydro Hi Points Champion.
BOPMPBC Open Mono, Open Electric Champion.
You could encapsulate with epoxy.

First part of my "T" connection is done.
Copper pieces turned down and soldered.

One could bend the copper in the middle if it would make the setup easier to do plug ins.
I have some 1/8" thick copper plate I was thinking of using in a similar way. I could cut some pieces in a "Y" shape or a "U" shape.

These are solid slugs(no bending). They are going in front of the ESC, with the batteries on each side,
So now I have + and - pointing right at the batteries.

I just put the wire in the hole, it is not soldered yet, because I have to shorten the ESC wires yet.
For wrapping it, I am going to pick up some 3M electrical tape in Black and Red.

I use this to wrap anything that gets hot. Wont fail like shrink does. Stays put to 500 degrees.

Noisy person
I tried this a few different ways, this is what I came up with.
