Setup advice on an old 31" Prather Deep V that's gone brushless.

I think its about time I asked some questions on how this thing is supposed to be setup. over the past 10 yrs. I've
had a blast building and rebuilding this boat. I'd see something or get a crazy idea and tear into it to see if I could make it go faster. At one point I had to switch to a solid prop shaft cause it would made pretzels out of all my flex shafts. Then I had to make extra long steer fins to keep the torque from from flipping it over when I punched it. Or...
it'd just rip everything loose. Anyway, that was many designs ago and now I have it all wrong I think cause even after
adding trim tabs and shifting weight around I can't keep it in the water after it comes up on plane, the bow starts slapping like heck. I guess my stinger is too short making too much negative prop angle in order to keep the prop in the water etc. etc. etc. but I don't know if center of gravity is important or where it should be. Any wisdom or advice
would be great! (its no fun having to yield to a Spartan)!
