You KV seems very low for a 3s setup, I almost use that kv for my 6s.
For mono I use the following KV:
2s = 5000kv
3s = 3400kv
4s = 2600kv
6s = 1600kv

Yes you're right I meant 6's
Your continuous amp draw is rated at 144 amps which for me is a little to close for comfort for my liking with a 180 amp esc, I would run a higher amp esc just to be sure.

High KV for 6S in a Mono ( Small Prop)
I use 1850kv on 4S2P in my Mono
1750kv - I would say 5S would be better
Unless you are only going to make a couple of speed runs each time out.

I already own this set up and the test runs going not so good. I can run about half throttle ok but when I try to go full throttle the ESC goes to half power until I bring boat in and reset the esc. It does this stone cold and hot around 160F
should I suspect ESC is too small or is it possible My lipos are not up to the motor has to draw out of them?
No probs mate, my Q mono runs a 1717 castle motor 1580kv with a watercooled castle XL2 esc.

200 amp esc be enough?
the esc is shutting down at full throttle....
What do you have the lvc set @, you could try lowering the lvc or turning the lvc off & see if that makes a difference. With the lvc turned off you must time your run time so as not to over discharge the batteries, it also depends on how good your batteries are with not to much voltage drop under load.
Their have also been known problems with some of the 180a esc in the past shutting down like this, it was talked about on this forum a while back even with the lvc turned off they were still shutting down.
Martin is correct the 180 sealing has known problem, I would attempt to disable the lac and set the voltage manually and see if this works. If you have no success I would spend a bit of money and get a Swordfish or MGM esc at a higher amp rate.

ESC is at 160 F+
motor is at 130 F+
batteries are at 115 F + no puffing
The goal is to get to 70mph + with this set up …..

You may have a dead cell in one of the batts causing lv. Worth a check if the batts are suspect.

Your lipos are fine provided they hold a good charge and balance well. How old are your lipos, how many cycles and do you have anyway checking the IR(internal resistance)? You can have a lipo that balance just fine but have very high IR and thus will not give you the full power that it's suppose to give you when new or like new. You're right the temps on your esc are pretty high at 160°F. maybe causing it to shut down. BTW, what prop are you using since you haven't mentioned what prop you're using? !750KV is possible to run on 6S. Make sure you're running continuously and not stop and go as escs doesn't like that. You can fo full throttle every now and then but just make sure it's not stop and go. Also, do you have separate cooling for motor and esc? Make sure water flow is good.. .check it. One easy way is take a big gulp of water and blow from the rudder inlet or unplug the cooling line from the rudder and blow water through the cooling line and see if water is flowing out nicely and not clogged. . .do it for both esc and motor and compare. You didn't tell us what prop you're using. So before you start shutting your lvc down on your esc. . .perhaps your prop is too big to cause the high esc temp. Maybe try a smaller prop and see how that works. If it's not acting up when using a smaller prop it's not the issue that these escs have been known to do. Motor temps and battery temps are fine. If you don't have smaller props then try running 5S or 4S. Also do some fine tuning by making sure your props are balanced and sharpened as well as your turn fins and rudder blade.
I got out to test run it again.
turned the VCO to 3.0 and took it off Auto lipo and set it to 6s it made it a little better.
but, eventually it did go into limp mode.
because it was running better I did push it up to 59mph on 2 passes before it shut down. That's full boogie for my prop.
I am convinced the ESC is not up to the task of this 8HP motor.
cliff note: I am using 2 different sets of lipos both like new
