You definitely can get away with it on a low power setup, but I'm sure we're not talking low power here lol.
Running two brushed motors on one ESC is no problem. Running two brushless motors on one ESC is problematic. The high-end ESC maker Schultze mentioned this in their ESC instructions, that it can be done by experienced bosters, but was not recommended. Like those above, my recommendation is not to do it.

Doesn't Flier make a few esc's that run two motors on one unit?
Yes they do (two ESC's in one package $$$$), But if you have trouble with one, you have to replace both.
I run two ESC's - it is a lot cheaper to replace just one if you have a problem.
Sometimes when you have a motor problem it will effect or take out your ESC. so now you have to replace one motor and one ESC.(NOT TWO)
