I don' t want a speed saw monster, I want a fast cat to have fun with friends. I saw videos on Youtube like this one , 2 x 2150 kV on 6S so near 47.000 RPM.
Is this a "standard" or a saw setup ?

47000 RPM-I would say that’s a definite saw setup. Prop selection would have to be spot on, too big or too great a pitch will draw so many amps you’ll burn out your equipment. Maybe aim for around 30-35000 RPM for a boat that will have some longevity.
Higher power requirements also means less run time. I'd rather have a slower boat and play longer if I'm with friends.
