What voltage will you be running? What boat and motor, 30A is pretty low for boats.
The “V3” is the product identification, not it’s specification. According to the online manual the Seaking can be programmed for reverse. All ESCs have stop.

This is my story
I have a Panther Lap Cat 1 complete unassembled kit, with a 3.5 cc , never been used ,gas engine.
I would like to build this kit with an electric motor.
Lap Cat I: 27" Length, 12" Beam designed for 3.5 Motors, or electric.
I have 20 years' experience building and sailing RC sail boats and glider planes.
I will not be racing this boat.
I will use this boat, as an on the water, photo boat for our clubs sail boat races.
The boat will be still for most of the time and will be in use for about 4 hours.
I live in Saint Petersburg, Florida
I need advice on an electric out board motor, batteries, charger and controller.

Off Shore Electric mini out board with a two blade 36mm t431 prop
ESC 30A sea king 30 amp---- I need stop and a reverse function for the motor
5000 7-9 amp 6 cell Ni MH--- I already have a Ni-MH charger

the 3.5 outboard is a much beefier outboard than the mini.
I wouldn't suggest the mini. I think its to small. Id suggest looking for a used 3.5
For the other things, Id use
(1) seaking 120
(1) Leopard 3650 1650kv
(1) 3s 45c 5000 lipo pack or 4s 45c 5000mah pack

I talked on the phone with Wild Bill yesterday for 20 minutes. I made the suggestions after learning he has no experience with lipo's, and all he wants to do is push the boat around as a camera platform to photograph model sail boats. The lap cat with 4S power IS GOING UPSIDEDOWN. I told him the mini outboard is not to scale for that hull but again he is not into appearance. I suggested something like an airboat being more maneuverable but he said the wind off the air prop would upset the sailors. For cost I felt the Mini outboard which I have would not have enough power to roll over a Lap Cat. He has a NiCad/NiMhd charger so a 6 or 7 cell buggy battery would work and not make him invest in a lipo charger. To be honest a flat bottom wood barge say 12" wide and 30" long would be better but he has the tunnel and wants to use it. To spend money for a larger motor,esc, batteries and charger for what he wants to do didn't make sense to me. He is confused about KV and the mini on 7-9 volts will not be efficient but is a plug and play option. My retrieve boat has a 3.5 outboard leg I mounted on a 3/1 reduction with a 2000kv motor and a tug boat prop but for a novice it would be a real challenge.

My concern about this boat is that it will not handle +15 knots of wind and seas on our lake.
Also I need more speed for a brief time.
When the last sail boat makes the leeward mark I need to about 10 to 15 knots of speed to get to the windward mark and set up to video the mark rounding.
Will the electric offshore mini motor and a 5000 7-9 cell NI MH do the trick?
