A few of us here in the Pacific Northwest built some 60" FE scale hydros just to see if it was possible. It was a few years ago and the availabilty of HV esc's were miniscule compared to today.
Key is weight and prop size. With larger FE boats the margin for error is much smaller. Don't worry about making it watertight as long as your radio and esc are protected and you running in freshwater. Start small on your props and work your way up in size. I think a Castle 2028 on 10S2P could be workable if the hull isnt too heavy.

I think this project is going on the back burner. Too many variables and opinions on setup. It's going on the wall. Think I'll start building a 1/8 scale hydro.

Theres an incredibly abundant amount of information on 1/8 scale hydroplanes in general, though not quite as much for brushless and lipo powered renditions, but still alot nonetheless. Its a much better route to go with if your are overall unfamiliar with the nuances of building like I was, and just the whole process of learning and gaining perspective will grant you very fulfilling understanding of it all that will prep you for a project like this down the road should you choose to tackle it.

I didnt really consider the whole transport issue of these things too when I first starting going to the lake with my 1/8 scale. Although 15lbs doesnt sound like much weight, it was suprising to me how difficult it actually is to simply carry the boat from your car to the water.... not to mention hydroplane hulls in general (and especially scales with the extra wings and offset ride surfaces and hardware, etc.) are just very cumbersome and awkward to handle.....
