Good goal speed with that boat. I had one and found it gets a little loose over 60mph. Not that it can't be done... it'll just stay upright better at under 60.
You can obtain those goals with a 36mm motor. Just need to stay above 60mm length.
This would be a good motor to obtain your goals. It is a standard 68mm motor that's been custom reduced to 61.5mm and would make a nice fit in the small space leaving a little additional room for the esc and batteries verses a 68mm to 74mm long motor. Pair this with a 47mm prop and you'd be in that speed range.
