Best way to setup a boat

I want to know what is the best way to setup a boat. I have a new motor and esc that im going to try in my 26" cat. Do you set your cg first? and if so what should it be? how do you know what strut angle and hight to start with? These are all thing you learn from years of doing, but Im new to this and if i can learn from the pro's then maybe i will try my luck with a new DF or CF hull. I hear mono's are alittle easyer to setup. If you guys can spare some advice i would be greatfull, Thanks
