I have an echo and love it, the fact that it turns on a dime at full speed is hard to beat!!!

I ran mine on 3S, yes it self rights out of the box (it has a flood chamber). Stock vs. Stock, I'd say the eco is faster.
Nothing turns like an eco!

You can change the motor, but it's stock motor is all that this hull needs on 3s. If you run 2S, you can change the motor to get more speed.

I run my echo on 3s, and had to add a couple extra holes too the flood chamber plus some lead weights on that side as well.
As for upgrades, I'm not sure you could use a much bigger prop due to clearance issues. The stock motor is fast on lipos
watch the videos. They are totally different in how they drive. The esc's are irrelevant as they work with the motors installed. The carbon props work great on the mono. The reason for the stainless prop on the ECO is because it is tiny. Carbon would never hold up in such a small size.

Well if your not going to buy my micro cat I have listed.....lol
My vote would be the Mini Echo, its a pond rocket that makes 90 degree turns. Of the boats I have it is by far my favorite. It is fast and turns on a dime plus you will not have to go swimming like I have after my SV!!
Good Luck
As Sailr has said their very different types of boats, The Velocity is a surface drive deep v that rides very well in chop ( relative to its size ) & i would say is probably faster in a straight line. The Mini Eco is a mono that is still used at world championship level & is sub surface drive & will turn much faster ( blink & youll miss it ) but needs less chop than the Velocity. Very difficult to pick one over the other. Thanks Martin
So you are not considering the Starship anymore? It's the fastest of the bunch.
SweetAccord for my own interest how stable do you find the Tenshock minicat & do shafts last ok in them, Also considering the Hor Bolt Micro but dont know much about them though. Thanks Martin.
I have not replaced the shafts and they last a long time being a wire. I do run the liner in mine and oil it after every two runs. The Minicats are stable no real issues, or quality issues. I'm still waiting on my Bolt to say how I will like. It's a copy of the Minicat Hydro but the drive line it larger and the motor coupling is larger. Overall there is not a HUGE difference. Just minor ones but I have not done a 1:1 comparison yet. I do prefer the looks of the Minicat.

Martin, get with these guys on the Hor as they have run them. https://forums.offshoreelectrics.com/...ad.php?t=21402 You can see how the Bolt runs on youtube. Hobby King carries it also and I believe there is a review of it on youtube also.
Hope that helps.
Do you find that the Minicat flips very often & what sort of water does it like. Thanks Martin.
Both like calm water but a little chop is ok, and I have yet to flip either one, but then I baby my boats and don't do full throttle turns on purpose even on calm water.
If you go to youtube and search these boats you can see how well they run if you observe the water in the video. We don't get much wind here and the water is mostly calm.
Here is a short video of mine (starship):

Ok I've done all the homework for you on the Starship. All you have to do is click and watch. You can read all the users descriptions on their setups (if posted) and see how they are modding these with different motors and what batteries are being used etc.
Also you can see how they perform in different water conditions also and get a good idea what to expect.
Click, watch, enjoy:
