For the past few months now I've been enjoying this:

I got the app for free a few months ago and it was just for a high wing trainer and 1 venue. After enjoying it everyday for a few weeks, I went ahead and bought the flight sim pack for $5. The flight pack consisted 3 more planes (2 low wings and a ducted fan), a Blade CX helicopter and 2 more venues.
It is certainly a blast! You'll love it!
Last January 10, the app update added RC boats to it - yayyyy!!!!!
It included a 4' long electric boat and 5 wooden ramps (water ski ramps) so you could jump your rc boat! A very decent rooster tail if I might add!
You can buy more planes, helis and even a 8' and 15' rc boat for $3 each in the app store. Now you can fly rc planes, helis and boats in one app! Highly recommended!

None of the videos above show the new rc boat update since the update was a mere 10 days ago, but if you check out the version history of the app - version 2.5.0 mentions "rc boat added".
If you only have pc, this is probably the best (or atleast one of the best):
High quality RC flight simulator for radio controlled models. Supports normal game pad. Many RC planes and helicopter models included. Import your own flying field or RC model.
Too bad as we only have macs here at home, but if I have a pc - will definitely get that!Comment

Hardware for a Cat is indeed very easy as all you need is a skeg/strut and rudder.
Skeg/Strut:
Rudder:
In a Cat, the rudder bracket you need would be the shortest distance from transom to rudder blade. Either get a straight rudder blade or a tapered one, but choose the one that has 2 water inlets to cool the cylinder head and tune pipe.Comment

With regards to your link, it is just a strut - its better to use a strut/skeg. The rudder in your link does have the correct bracket and blade - however in the description it only says "1 water pick-up". You're better off with having 2 water pick-ups.
No need for the turnfins as well as elect. motor mount.

Please pardon the lousy quality of the pics - but thought you guys would like to see the rc boat app that is now included in the rc plane sim.
You can see the wooden ramps floating on the water as well as the decent rooster tail of the boat!

Hey guys, I thought you'd get a kick out of this. My son and I also race RC cars. Formula One is one of the classes we run in. Only Tamiya stock kits are allowed. He chose the Ferrari F60 kit (which is an F104 chassis if you care) but didn't want to do the same RED color scheme. He wanted something scale looking, but unique.
I suggested the Miss GEICO colors. He loved the idea! We have the 30" Proboat version and its one of our favorite toys.
Here's how it looks all done. I had to mix Parma Faskolor paints to get the neon yellow/green just right, but its BRIGHT now!
He's calling it the "Mr. GEICO" which is about right!

Hi Lenny,
Just an observation in regards to your cat pics - you may want to change your header to a 90 degree one to move the tune pipe to the left most side of the boat for you to easily access your radio box.
The header currently connected in your pics above is a "deep vee header" similar to this:

You may like to consider a 90 degree header like this:
Wider boats such as your Cat above have ample room to place the pipe inside the hull and utilize a full covered canopy. Another advantage would be an easier access of your radio box.
Standard width boats that cannot place a tune pipe assembly inside the boat must contend with using a 105 degree header in an upward slope going to the transom above the radio box and connected by a bracket in the transom.
With this setup, you have to remove the pipe from its bracket and lift up your pipe in order to access your radio box (taping, removal and installing the battery).
For this setup, you have to cut an access for the tune pipe in the rear of your canopy if you're using a full canopy ......or use a half-canopy or do it like some folks who dont put any canopies at all.
Your first pic above shows a hole on the left side of the transom which im guessing where the tip of the tune pipe exits. I have a similar setup in my 50" Apache which im attaching below.
