How do I replace the wires on a lipo battery the gun I have isn't melting the solder?

You need a soldering iron with more heat capacity, possibly even a broader tip too. Something that can reach 750C. I use a Hakko FX888 adjustable solder station

I'm not familiar with farenheit, but is it possible that you meant 750f fweasel? I use 450c and that works fine, you just need a high wattage iron and/or a tip with a lot of thermal mass.

You need flux for any soldering, but I use flux core solder rather the separate flux for electrical soldering, it is however specialist solder for aluminium rather than the usual 63/37.

Careful soldering lipos though, can be done but do not apply heat for longer periods, 5s is the comfort level. Lipos do not like heat and die plus if you melt anything by accident they might catch fire.
Do it in a fire-safe environment. It can be done and it's safe if done right.
