I have few question about the capacitors for HV esc:
They have 63v 1000uf, 130c caps, let say i put 5 of them in to my esc, how bout just one 80v 10,000uf 130c, can i use this or ....not.
i mean which number i should depend on the most, higher voltage? higher uf? or temp

I think you'd have a hard time finding a cap like that, if you do, I'd be HUGE.
Besides, are you sure you wanna depend on 1 cap for your ripple current needs?
if you have many, chances are you would not burn the ESC up if you lose a cap or two...
It depends on ALL of the items you mentioned, they are all correlated. You want the same voltage that the
manufacturer has on the originals, same uf or a bit more and high temp caps with ultra low impedance.

I will prefece my post first by saying that I am not an Electrical Engineer. However, I did consult one of the EE in my office...

When I bought my extra caps, I tried to maintain the same company (Rubycon), same series (ZLH), and no lower uF rating than was on the original speedo.

As Ub mentioned the caps that you talking about are going to be HUGE.
