how to check hobby wing esc

hi i have a hobby wing esc 120 v3 and like to know how to check to see if there is a problem with it why iam asking this because i took my boat for race and i notice the boat going fast and slow all true the race wen i have the remote full throtle like as if it ha the jitter ?? mabe it the esc or an it be my motor i have leopard 3674 2200kv

Sometimes the easiest way to find weird issues like that is just process of elimination starting at the least expensive components, or what you have spares of first. I had an issue like yours that was fixed with a new receiver BTW.

If they are original stock 4mm connectors you may have a cold solder joint now from heat during running. Check to see if any come lose under the shrink or look to see if some are bent indicating solder has melted a bit from heat.
