Bench testing a motor

Is there a way to estimate the amount of load placed on a motor in water so a motor could be bench tested under similar loads.

Another way is to run a boat with data logging, either with a stand alone unit (http://www.eagletreesystems.com/) or the one in your ESC (http://www.castlecreations.com/products/phoenix_ice.html).
