I run my boat on turnigy 2s 20 - 30c 5000mah batteries. My motor is a feigao 8s and my esc is a turnigy 120 amp marine. The question, is it safe to run a turnigy
2s 40 - 50c 5000mah on my present set up. I am asking because I don't know, also I don't want to burn or blow something up.

Yes. Given the higher C rating of your new batteries, they should run cooler than you old ones.

Your motor/ prop/ hull will dictate how much current will be drawn from a battery...the battery is just a gas tank.

If you were fine on 20-30C, you will be fine on 40-50C.

a numb question on the C rating? what does it mean ? definition? i am running turnigy 5000mah 2s1p 20c batteries on a stock sv27. would the esc be able to handle 30-40c batteries.

With respect to your question, whether an ESC will handle your set-up depends more on your set-up than the C number of the battery, ie the hull, hull trim, motor and prop. If it is operating Ok with 20C packs then going to 40-40C packs will be just fine. Should actually be a little cooler.

What is the KV of that motor? Be advised that 2S setups draw very high amps!

according to aquacraft kv: 1750 for the stock motor.

I presume you are not attempting to run your stock SV27 on a single 2S pack. The SV27 boat is designed to run on a pair of 2S packs wired in Series (we call that system 4S1P). The confusion comes if we use a single 4S pack. It is ALSO a 4S1P system.
