The stuffing tube looks OK.
The trick to getting it right is as little of a bend as possible.
That way there is less friction on the drive line.

so lemme ask this.... since my transom os flush across the back, should i use a strut that is closer or further away from the transom...?

I like to have my strut as close to the transom as possible
to help with prop walk issues.
The boat i'm referring to is a H&M MARITIMO CAT.
40" LONG 10.5" WIDE.
Your cat looks to be about the same size.
Running the strut behind the transom works 2
And allows for easy access to the strut if you need to adjust it.
Theirs a couple of ways you can do this.
with an in line rudder behind the strut
or an offset rudder beside the strut.
I like the in line rudder for more of a scale look.

Well I found a really cheap aluminum strut but it's set back, maybe I could redrill so the strut is right on the transom the do an offset rudder

Because you don't want cheap...
